About Us

We are a group of friends who are passionate about coffee and the Colombian countryside and thus came together to create Café Bosques de Tocarema, with the purpose of offering a product of the best quality, supported by sustainable and innovative practices. We are located in the town of Cachipay, Cundinamarca, in the county of Tocarema, in a mountain and tropical forest ecosystem, which we are committed to preserve and nurture.

We believe in the need to implement a new model of sustainable agricultural production that responds to environmental responsibilities and the needs of the local community, while at the same time allowing us to offer a product that meets the highest standards of quality. We want our customers to enjoy the aromas and flavors of the tropical mountains in a coffee of single origin, exquisite and memorable.

Plantation

We design and manage the crop in line with the ideas of Permaculture; planning and enriching the interactions between the forest flora and fauna species, in order to improve production and quality of the coffee.

We plant the coffee along with other endemic species of the tropical forest that contribute their shade to help regulate climate, provide nutrients to the soil and attract pollinating birds and insects, thus enriching the local ecosystem and favoring the needs of the crop.

We take care of each plant in order to control damages, pests and diseases as well as to ensure their development. We strive to be at the forefront, constantly monitoring the climatic conditions and characteristics of the soil, making use of state-of-the-art technology to recognize pertinent variables and develop specific maintenance plans that meet the specific needs of each lot.

Harvest

Due to the geographical characteristics of the region, besides two large annual harvests, there is permanent production and coffee is collected throughout the whole year. We take special care in collecting the fruits manually and in selecting only mature coffee beans. This allows us to offer a fresh product to our customers, directly from the countryside to their hands.

Processing

Our artisanal coffee processing method is comprised of several steps intended to take advantage of all parts of the fruit and ensure quality, providing the ideal conditions for the transformation of coffee into an exceptional ecological product. We use mechanical depulping without water, fermentation by immersion in water tanks and sun drying techniques, following a selection process in each step that allows us to remove impurities so that only the best coffee beans reach your cup. We filter the wastewater before reintegrating it into the fields and use the mucilage, the husk and other solid sub products for composting.

Additionally we have a numbered record for each batch of coffee that is processed on the farm, which serves to closely monitor the behavior of crops and to continue, in an informed manner, finding ways to improve our products.

Storage

We store our coffee under controlled humidity conditions that favor the preservation of the coffee beans and prevent its deterioration. We keep a numbered record of each batch of coffee to guarantee an adequate follow-up and we offer our clients the possibility of consulting the history of each batch up to its origin.

Products

We produce both roasted and green coffee for the local and international market.


Roasted Coffee

Our coffee offers a clean, fresh cup with citric sourness, a soft aroma and hints of caramel after adding hot water. We roast green coffee frequently in order to be able to offer fresh coffee that better conserves its aroma and flavor. We pack our coffee, as beans or ground, in bags of 250 and 500 grams; and use ecological, resealable packages with degassing valves.

Green Coffee

Our green coffee is hand-picked so that only the best coffee beans of each harvest reach our customers, after being carefully sun dried and stored in ideal conditions of humidity that guarantee freshness at the time of delivery.
